Peanut butter and honey cookies

I love this recipe. This was the fist recipe I learned when I fist became a vegan. So simple, healthy and delicious.

Ingredients:
2 cups dry roasted peanuts
1 cup whole wheat flour (To those wheat/gluten free, I use Bob’s Red Mill all purpose GF baking flour.)
1/2 cup honey (warmed in microwave so it’s in liquid form)
1 teaspoon vanilla
1 teaspoon of salt if peanuts are not salted

1. Place peanuts and flour in a food processor for about 1 minute until they are about the same texture.
2. Place mixture in a bowl and add in honey, vanilla and salt. Mix with your hands. (The dough should not be crumbly and dry. If it is, add a tablespoon of water.)
3. Pinch off pieces of dough and place on cookie sheet. Use a fork to flatten and put water on fork as needed to keep the dough from sticking on the fork.
Bake at 350 F for 10 mins. They are done when the edges start to brown. Do not leave them in for too long; peanut butter cookies burn quick. Let them cool and enjoy!
